Hd several knife sets over an 18 year career and i have always loved these knives for their affordability and ease of maintenance. Good knives, very usable set to start a career with, will last your career as well. I still use mine at home. Ive had the rosewood set and this version. Love them both. They do require regular sharpening but that's just part of maintenance of any knife set.

Perfect for the aspiring chef or to keep in your trunk for when you visit friends who ask you to cook and you discover their knives are crap. This set is also perfect for someone who is looking to buy a set of knives for their home. Pick up a magnetic rack or block and you can display them nicely. These blades stand up to my Japanese forged blades at a fraction of the cost. They sharpen easily and hold an edge for a long time. Handles are quite comfortable as well. I paid a little over $100 for the set and there is no fluff in the set whatsoever. Well worth over twice that much for the quality and lifetime guarantee. There is a newer version but I like this one because of the offset bread knife and the slicer. Grab it while you still can.

I've always borrowed my husband's 8" fibrox chef's knife, and it was high time to get my own! My husband's 8 inch chef knife is still in great shape even after 2 years of near constant usage, and I'm pleased to say these knives have the same quality as the one we acquired years ago. I am very happy that I found this particular set since it had almost everything I wanted from Victorinox. Specifically, my two desired knives were the straight handled 6" flexible boning knife and the straight handled 8" Chef's knife. The price for this set is pretty reasonable considering the individual cost of these knives separately! I much prefer the straight handle on these as opposed to Victorinox's other models with a slightly curved handle. I have small hands (I'm 5'1" and wear extra small gloves when working), so the fact that I can handle these comfortably is certainly appreciated. Sometimes the 8" inch knife can be a tad unwieldy in my small hand, but that's usually when slicing monstrous things like squash. I can't fault the knife for my teeny baby doll hands, since my husband doesn't have this problem. The bag is pretty worthless, by the way, but I won't knock a star off for that because I was never intending to use the bag.I keep my knives in individual knife protectors anyways since I'm pretty obsessive about blade maintenance. I hand wash these immediately. That means I NEVER put them in the dishwasher or even throw them in my sink to clang around. As a dentist, I always notice how my blades lose an edge after repeated runs in the autoclave for sterilization and knives placed in the dishwasher have a similar issue over time. I like SHARP things, so he addition of sharpening steel is awesome in order to keep the knives honedOther ways to maintain the blade are to use plastic or wooden cutting boards (no glass, porcelain, or enamel) and not rocking the blade left to right when you hit the cutting board - just keep slicing back and forth. By the way, when drying these BE CAREFUL! While wiping the boning knife once, it went right through my drying rag and make a nice shallow incision in my fingertip. Fortunately it was such a clean slice that it healed very quickly.A big surprise is how much I love the 9" offset sandwich knife. I love the way it slices through breads, both delicate and firm. Not only can you visualize your slicing better, it's as though it places the force in the most opportune area in the bread, so I get the smoothest slices! Seriously, I almost get no crumbs when using this knife, and I haven't seen a bread knife of this price tier do that ever! It was the knife that I thought I'd use the least, but boy did that change. I find I use the chef's knife and paring knife almost daily. This is followed by the offset sandwich knife and boning knife a few times a week (I like to break down bulk Costco meats for my Foodsaver and meal prep). The flexibility of the boning knife is particuarly useful when removing the silverskin from pork tenderloins. I use the 10" slicer once a week for roasts.This set had everything I need EXCEPT the santoku knife. But Woot! always has great prices a few times a month on Victorinox sets, so I got a 3 piece set of the Santoku, tomato knife, and vegetable peeler for about 30 bucks a month ago to round off my collection. Between this Victorinox set and that second 3 piece set, I never use any other knives! These are great multitaskers, and all of my other non-Victorinox knives sit unloved and dusty because of that. Consistently Victorinox always impresses me, and I'm glad that I learned about the brand a few years ago from America's Test Kitchen. I don't know how Victorinox keeps the grain of their stainless steel so tight at such an inexpensive price, but all I know is I wish some of my dental instruments could keep an edge like these knives do! My next purchase will be a set of their steak knives, which I'm very much looking forward to purchasing.
