This is one of the most satisfying purchases I have ever made! Electric waffle makers never gave me what I wanted in a waffle, and they were always hard to clean. This cast iron waffle maker is a dream come true.I seasoned the waffle maker very well before using it. The first few waffles you make may stick, but the more you use it the less they will stick.To make the waffles, I heat the pan over medium heat, flip it over to heat the other side, open it and brush on a mixture of melted butter and oil, portion the batter, close it, flip it again, and cook for 1 and a half on bother sides. That is what works for me. The waffles are perfect and crispy on the edges.Note: the more you use it the better non-stick it gets, making sure the pan is hot enough and properly greased before pouring in the batter.

I washed my new waffle iron the night before and soaked in with peanut oil on two burners, one for each half. Deep puddles are best, but I just sprayed generously, left it on low for a while, turned it off again and repeat. By the next day, I poured off excess oil and was ready to use. I was making yeast/sourdough-ish rice waffles as a wheat bread replacement. I oiled between uses and didn't have any sticking issue until the last two and they were minor. I turned it off and let it sit there and it came off later.I had more trouble turning the waffle iron over without getting burned than I expected. It is about 4lbs, and I am now glad I didn't buy the 8lb one. I want to buy silicone handle covers and also one of those little silicone edge grabbers that would work well for grabbing the hinge to turn over. Need to measure the handles first and get the right ones. I fear the handles might get hot right through the silicone, though. The interior is really rough to the point of me thinking about grinding it down, but it didn't seem to bother anything and works fine. It cooked evenier than reviews of similar I have watched, but I am an experience cast iron user.The waffle iron comes lightly seasoned. I don't know what they use, but some manufacturers recommend burning it off before starting your own seasoning process. It smelled a little funky non-food oil, and if I did it again, I would follow the advice of other manufacturers to burn it off. Then separate the plates onto separate burners and soak peanut and coconut oil in the pans on low a day in advance turning off and on and keeping low. Pour off extra and use. Use the poured off oil to lubricate between waffles. If you don't take time to season to prevent sticking, you won't be happy. Should improve with use. It works. I'm happy.

Es importante curar la gofrera antes de usar, ya que si no se usa correctamente la masa se queda pegada. Después de varios usos es más fácil. Cuidado con el calor porque la gofrera va directo en la estufa (preferentemente de gas).

Nice design, sturdy, I'm sure it will work well. But it makes little tiny waffles.

Finally tested it out yesterday - works great although I put a little too much in it so it oozed out and I didn't have it hot enough but after a few adjustments the waffle still came out great although I thought it would be taller? Can't wait to use it again. And clean up was a breeze because it is cast iron. Definitely a great investment. With a little practice I can see it will be used all the time.
