Baked 3 loaves of a richer egg cardamom bread in this pan with good results. Haven't tried it yet for baguettes but will! The loaves proofed in the pan and then baked. Evenly browned crust. Loaves released easily from Pan (I did use a very light coating of lard on pan). The included couche is cotton canvas, not the more expensive linen that traditional bakers would prefer. The couche is used for proofing loaves but not for baking. I have not yet used the couche nor the lame (sharp tool for cutting the slashes in top of loaf before baking).. I found some helpful You Tube videos on how to use perforated baguette pans such as this; also how to use a couche. Looking forward to trying French baguette loaves next. The pan and other items were shipped in a compact cardboard box that I will keep for storing the pan in my cupboard.

This is a fairly standard 3-loaf baguette pan that comes with a lame (and replacement blades) and what the maker calls a "proofing cloth."This proofing cloth is usually referred to as a couche, and unbleached, untreated, woven piece of fabric, usually linen or canvas, used to keep the surface of your baguettes evenly dry as it rises. This contributes to that great crackly, thin crust when done right. The proofing cloth included in this kit seems to be of a cotton fabric, but I can't tell for certain and there is no info with the product. It should be noted that the Amazon product page shows a photo in which the proofing cloth appears to be as large or larger than the baguette pan, and that is simply not so. It is probably about 3/5 the size of the pan. Since the couche is supposed to be folded around the proofing bread, there is simply no way you're going to proof three loaves in this single cloth unless they are mini-baguettes. Even then, they're going to be too crowded. The edges of the cloth are roughly finished off with what I think is called serging - I'm so not a sewer, so I might have the wrong term here -- and I have some doubts as to how long it will be before that starts to unravel.The included lame is pretty much identical to ones in every lower priced baking kit on the market. It does the job just fine.The pan works well. I didn't detect any hot spots or problem areas. I'm not sure why they instruct to brush with oil first as there should not be a sticking problem. Oiling a perforated pan is just going to smoke up your oven. The pan is hand-wash only, which is not unusual for these pans.This is a good set for the occasional baguette baker, a student, or someone just getting into baking. The pricing is fair IF you need the lame. I don't consider the proofing cloth large enough to be of much use with baguettes, but it could still come in handy. If you just need a pan, you might want to keep looking.I'm going four stars based on value for price point and the attributes of the pan only. It doesn't seem fair to compare this to true professional equipment.

This is a nice little pan. I'm a novice sourdough baker but I've never made baguettes before so I decided to try some cute little demi baguettes. They final proofed in the pan so there was no need to try and transfer dough to the oven which is nice. I baked them on a rectangle baking stone and used lava rock in a pan on the bottom of my gas oven for steam. They came out with a super crunchy crust and slid right out of the pan so it's totally nonstick. These dough balls were 220g each and I could've gone much bigger, but this was just a trial run. And my oven spring was a little sad because my scores weren't deep enough (learning).I see others say it's good for regular and demi baguettes but at only 15 inches long, it's way too small for a standard baguette which are generally over 20 inches (and probably wouldn't easily fit in your home oven anyways). So don't think you're going to get the picturesque baguette you see sticking out of grocery bags because you can only bake loaves that fit the 15 inch pan. I image this pan would also be excellent for your own hoagie rolls. You could probably snuggle six in the pan.I had to deduct a star because it comes in a set and while the pan is great, the proofing cloth is very small. The picture shows it much bigger than it actually is. You don't really need a couche since the pan takes the place of one so this cloth isn't of any use when making baguettes. It would be entirely too small to even use as a couche for three loaves. It can be used to cover a small dough ball for a bench rise but that's about it. The blades and lame are definitely useful so it was nice to have another set.Would I spend $25 for it? Probably not if I only needed the pan (since I already had the lame and blades and the cloth is pretty much useless). There are cheaper ones available if you only need the pan.
